王培仁老師在師大美術系畢業後，

擔任老師多年，

退休之前，就樂衷於嘗試各式新菜予人分享，

退休之後，索幸拿起鍋鏟爲更多遠道而來的陌生朋友端上一桌好料。

王老師自小天生嗅覺味覺敏銳，

吃過一次的菜，總能靠記憶回家拼湊出完整菜譜及調味幾何，

也因為過人的敏銳，而能嗅到許多人駑鈍不察的魚肉臭腐。

於是，老師棄葷從素，在自然天地間養成的果蔬找到更多自在的滋味。

王老師從不服膺於陳規，

她的料理有如創作，是味覺和視覺雙重的，

不可思議從未想過的組合就是會在老師的餐桌上出現，

皇帝豆與蘋果、圓茄與酪梨、茼蒿與薏仁......

每一口都和著驚呼讚嘆細嚼吞下。

幾次前往，有幸隨著老師及其工作室的夥伴一同午餐，

老師客氣的說著簡單用，

但上桌的又是一番不同風情的家常菜，

吃著總想起自己的媽媽，心也暖了。

老師是山東人，

手上的麵食功夫很了不起，

烙出來的蔥油餅，

吃過之後非常難忘，

飽漲之餘還要貪心的再一片；

老師說簡單做的高麗菜捲餅，

連吃三個還意猶未竟。

在王老師這裡，第一次感覺到胃小心大的遺憾。

這些沒有寫進書裡的料理，

只能上老師的無菜單烹飪工作室試試緣分，可遇不可求。

素食，能讓身體回到純淨，

不論是任何原因開始素食，

都別忘了讓這個重要的契機啟動，

吃的健康，吃的自然自在。

如果你有這樣的覺察，

這本書就會自然而然的成為你很好的朋友。
